Ingredients

Main Ingredients

  • 3-4 lb beef chuck roast
  • 2 tablespoons oil olive or avocado
  • teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 4 cloves garlic minced
  • 2 cups beef broth

Vegetables

  • 4 carrots cut into chunks
  • lbs baby potatoes or quartered Yukon golds
  • 2 celery stalks sliced
  • 1 large onion sliced

Herbs & Seasoning

  • 2 sprigs fresh thyme or 1 tsp dried
  • 1 sprig rosemary
  • 2 bay leaves
  • 1 teaspoon paprika

Instructions

  • Season the Roast Properly

Pat the chuck roast dry with paper towels. Season generously on all sides with salt and black pepper. This is your foundation—don’t rush it.
Why it matters: Proper seasoning penetrates the meat during long cooking and prevents bland results.
  • Sear for Maximum Flavor (Highly Recommended)

Heat olive oil in a heavy skillet over medium-high heat. Sear the roast for 3–4 minutes per side until deeply browned.
Pro tip: Browning equals flavor. Skipping this step won’t ruin your roast, but it will reduce depth.
  • Build the Flavor Base

Place onions, garlic, carrots, and potatoes in the bottom of the crock pot. Lay the seared roast on top.
Whisk together beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary. Pour over the roast. Add bay leaves.
  • Slow Cook

    Low: 8–10 hours (best texture)
High: 4–5 hours (acceptable, but less tender)
The roast is done when it easily shreds with a fork.
  • Optional Gravy

Remove roast and vegetables. Strain liquid into a saucepan. Simmer and thicken with cornstarch slurry if desired.
